Tre Stelle® Romano Cheese Soup with Cheesy Popcorn
A delicious and uniquely topped soup that’s creamy and crunchy at the same time!

Ingredients:
4 slices bacon, finely chopped 1 tbsp | 15 mL butter 1 cup | 250 mL onion, finely chopped 1/2 cup | 125 mL celery, finely chopped 3 tbsp | 45 mL all purpose flour 1/4 cup | 60 mL white wine 1 1/2 cups | 375 mL chicken stock 3 cups | 750 mL milk 3/4 cup | 175 mL freshly grated Tre Stelle® Romano Lupa Cheese, grated ground white pepper to taste 1 cup | 250 mL microwave or air popped popcorn 1 tbsp | 15 mL Tre Stelle® Romano Lupa Cheese, grated
Instructions:
In medium saucepan cook bacon until crisp; add butter, onions and celery, cook until tender. Stir in flour and continue to cook until combined, slowly pour in wine and gradually add chicken stock and milk. Cook over low heat until smooth and slightly thickened. Five minutes before serving add grated Romano Cheese and season with white pepper. Meanwhile, turn oven to broil. Place popcorn on a baking sheet lined with foil; spray sparingly with vegetable spray and sprinkle with grated Romano Cheese and carefully broil just until cheese begins to melt and turn brown. Pour soup into bowls and garnish with popcorn. An alternative suggestion: replace the bacon with pancetta and celery with fennel for an Italian flair!
